“Seaside with Sommeliers, ” A Beautiful Waterfront Dining Experience

You’re watching the picturesque views of the sun setting on the horizon of the Pacific Ocean while sipping wine and nibbling on delicious hors d’oeuvres—ah, the beauty of a daydream escape. Wait, pinch me. This is no fantasy. This is real life at Laguna Beach’s Surf & Sand Resort. Their dinner series “Seaside with Sommeliers” on the beautiful Ocean Terrace offers above and beyond what you may expect for waterfront dining.
With artfully crafted dishes by Splashes Executive Chef Ron Fougeray and thoughtfully paired wine by Sommelier & Cellar Master Joe Baumgardner, you’re in for more than a meal, but an entire culinary journey in one evening.
Having learned from respected culinarians, Fougeray is passionate about making everything from scratch and sourcing the finest possible ingredients. A keen appreciation for food history plays a large role in the style and flavors that he displays at Splashes. “Culinary arts is a revolving wheel, ” he says. “It helps to remember the ideas and techniques of those that came before us while putting a modern twist on flavors and presentation.”
Most recently, Fougeray and Baumgardner teamed up with Schramsberg Vineyards to create an outstanding menu. “This was a labor of love, ” Fougeray explained to the dinner guests. A standout pairing was the tuna tartare with the 2012 Schramsberg Blanc de Noirs. The tartare boasted persimmon, horseradish, a hint of raspberry vinegar, sesame, and spiced squash coulis. And the fruitful finishes of the Blanc de Noirs made for a beautiful marriage.
The dessert was incredibly satisfying with its light and creamy consistency. The frozen Grand Marnier souffle had minimal ingredients to create optimal flavor—served with berries coulis and Grand Marnier tuile. This balanced splendidly with the off-dry 2012 Schramsberg Crémant “Demi-Sec.” Guests felt like honorary attendees while sipping this bubbly seeing as it has been served at several state events throughout history. Most recently, it was served at a White House Dinner hosted by President Obama.
A major highlight of the evening was when Laurent Sarazin, VP of Sales and Marketing for Schramsberg Vineyards, sabered open a wine bottle. Of course, everyone whipped out their phones to document this epic waterfall of wine.
“The culinary team has received such great response from the original three dinners from their fall 2016 series as well as plenty of interest from many of the guests wanting to attend future dinners in 2017, ” says Ante Dapic Food & Beverage Director for Surf & Sand Resort.
