If you’ve been to Cape Rey Carlsbad, you’ve probably stumbled upon the amazing Chandler’s Restaurant and Lounge located inside the resort. We had the pleasure to try out their brand new lunch menu provided by Chef Teri McIllwain, and we have to tell you about the wonderful experience. Chef Teri’s down-to-earth approach to culinary ideas is something we can all take away from, and it certainly accentuates the whole oceanfront dining experience.


For starters, I had the Burrata and vine-ripened heirlooms with grilled asparagus, arugula, pesto and a red apple balsamic reduction. The dish serves as a sneak peek of the multiple vegetarian options offered in this new menu. The vegetables for the sides are rotated often; they are handpicked weekly by Chef Teri from the local farmer’s truck called “Happy Living.”



Also part of the appetizer menu, the capeside poke was hands down my favorite dish off the menu. It was presented to us on petite plates (sort of like a shooter), and each shooter was filled with ahi tuna topped with quinoa, Thai chili aioli, cucumber, marinated seaweed, ponzu sauce and lime and wasabi. The rainbow quinoa resembles sushi rice, so you are getting a familiar taste while keeping it healthy with a variation of grains.



For the third and fourth courses, I had the crab and shrimp BLT and the mini all American burgers with truffle fries. What makes the BLT special is the shrimp and crab mix in the middle of the sandwich. The lemon basil aioli really brings out the flavor of the seafood and adds a twist to the classic American sandwich. On the other hand were the sliders. The medium rare smoked patties are topped with bacon, caramelized onion, cheddar cheese, lettuce with a truffled tomato aioli sauce and pinned together with a spicy red pepper.



For the last course of the meal, Chef Teri provided us with her farm inspired desserts four-ways, including a strawberry cream puff, a chocolate éclair, a grapefruit mousse and a fruit tart. Even though we were full, these delicious treats felt very light.

Chandler’s new menu emphasizes fresh farm ingredients and promotes healthy living. Other vegetarian dishes on the lunch menu include the artisan cheese plate, white bean hummus, portobello mushroom gyro, beet and citrus salad, wild mushroom pizza and many more. If you’re ever in North County San Diego and want to enjoy a delicious meal at a local spot with amazing ocean views, try Chandler’s and it might just become your new favorite restaurant.
