Saffron seasoning, Spanish rice and a medley of seafood and meats sizzled over an open flame combine to create a culinary masterpiece that dates back to 19th-century Spain. The star of this dish is undoubtedly the Ibėrico pork, which is served three ways—as pork belly, sausage and chorizo.

To the uninitiated, Iberian ham is considered to be one of most expensive hams in the world, cured and matured between three to 14 years, strictly in Spain, and can cost at least $400 per leg. Through an ambitious and elaborate process, this delicacy has proved to deliver an abundance of flavor with every bite.

To complement the world’s most coveted pork, Cafe Sevilla adds decadent lobster tail, clams, calamari and mussels to marry an aromatic dish filled with rich Spanish history.
