1 | Beef Taquitos Mexican Food Laguna Beach

Employee Favorite: Desiree Gomez, General Manager

“Oh my goodness. I love our shredded beef and ranchero sauce. We make both in-house and it’s my go-to when I’m at a loss on what I want to eat. It’s quite a filling little snack, topped with sour cream and guacamole!” says Desiree Gomez, Coyote Grill general manager. The beef taquitos are packed with shredded beef inside a golden-crisp corn tortilla. Topped with ranchero sauce, guacamole, sour cream, tomato, onion and black olives, this will be your new favorite appetizer.

“[I’m] not much of a breakfast person, BUT chorizo and eggs is my go-to when I do have a hearty appetite in the morning! ¡MUY DELICIOSO!” says manager Radley Pilanca. This drool-worthy breakfast comes with scrambled eggs, Mexican sausage, tomatoes and green onion, all topped with enchilada sauce and cheese. 3 | Jalapeno Bacon-Wrapped Shrimp

“I think the heat of the Jalapeno bacon and the sweetness of the pineapple salsa—then adding shrimp and chipotle—is such a great combination. Every person I recommend it to falls in love with it,” says manager Kiley McDaniel. A featured, not-to-miss dish at Coyote Grill, these shrimp pack a punch. Six large shrimp are wrapped with mouthwatering jalapeno bacon and topped with chipotle cream sauce and pineapple chutney salsa. You’ll want to order two of these for the table!   

 

4 | Langostino Fajitas

“The sizzling aroma of the langostino on the steaming hot pan is not only a sight to see, but the taste can not compare to anything on the menu. Add a little steak on there for surf and turf. I’m so full after eating just half of it,” shares manager Emma Lorenzo. Sizzling lobster paired with grilled onions and bell peppers, then topped with enchilada sauce will have your mouth watering. Build your own tacos with the tortillas, rice and beans that come on the side.

“I always tell my guests about the calamari tacos; they are simply the best thing on the menu. A beautiful calamari steak, lightly battered and fried to perfection, sliced into strips, piled into a warm flour tortilla, topped with fresh red cabbage, cheese, tomatoes, cilantro and finished with our homemade white sauce. Of the thousands of calamari tacos I’ve suggested over 20 years—to this day—I have not had an unsatisfied guest. It’s a true Coyote Grill must,” explains bartender Mark Evans.
