French native chef, Bruno Massuger, has been creating in the Newport Dunes Back Bay Bistro kitchen for the last year-and-a-half, and brings an American-style menu specializing in sustainably-harvested sea fish and in-season foods to the table. A culinary artisan, he is always striving to bring something new to his craft. The third dinner of the Meet & Greet series, hosted last week, served a seven-course menu of Mediterranean fare to a booked-to-capacity crowd. 40 guests gathered around a large table bathed in candlelight. The feast included grilled fresh water prawns with onion and pancetta compote, Tuscan cantaloupe soup, wild branzino with sun-dried tomato risotto, and porcini dusted veal loin with grilled vegetables and roasted spring potatoes. These were paired with Ferragamo’s own chardonnay and Caressa J Ferragamo super tuscan red wine, along with Prosecco and Altare Barolo wines. Ferragamo’s Wine Dinner
“I like to bring new creations to a menu and keep the flavors fresh, ” says Massuger.
Trained at the Ecole Hoteliere in Rouen, France and later, the Culinary Institute of America, Massuger is a member of Masters of French Gastronomy, Les Toques Blanches, ACF member of Escoffier Society and an ACF member of Escoffier Society. Ferragamo’s Wine Dinner
Former Quarterback for the Rams, Vince Ferragamo, whose vineyard produced the smooth, red Carissa J, is no slouch when it comes to fine food and wine. A full-blooded Italian and proud of it, he bought a sizable property in Orange Park Acres where he and his family reside, setting up Ferragamo winery to cultivate Sangiovese and Cabernet Sauvignon grapes. “Caressa J” is named after my 3 daughters, Venessa, Cara, and Jenna, ” says Ferragamo. “Our southern California climate with its warm days and cool nights is similar to Tuscany’s climate and is perfect for the grapes.”
The Ferragamo Meet and Greet Wine dinners have sold-out since they began, three dinners ago. The Rams-themed series which honors a Rams player from seasons past and present will run through NFL season.
Judging by the enthusiasm of the guests gathered around the table in honor of Hall of Famer, “Deacon” Jones, it was a tasty success, followed by a mixed green salad, ‘to clean the palette’ and cannoli and bistro cappuccino with limoncello. Priced at $67/per person, dining in a backdrop of ocean sunsets, it is the best deal in town.
