For nearly 200 years, the Galapagos Islands has been the best place to witness the transmutation of a species. Charles Darwin, if alive today, might feel that evidence of evolution is best witnessed in Las Vegas. It is not the species that mutates but the experiences that are ever-evolving. Eight years ago our species was drawn to the desert for a cheap meal, hours of pulling slots and a rectangular pool. Thirty years ago the pull was generated by extravagant structures, fantastic light shows and choreographed fountains. As our tastes continue to mutate, Las Vegas is forced again and again to evolve, to make something better, to improve their offerings.

In 2019, Las Vegas has morphed again and this version deserves your attention. Here are my picks of must-sees, must-visits and must-experiences in Las Vegas in 2019.

A Star is Born This Way

Lady Gaga Residency at Park MGM

Lady Gaga, six-time Grammy Award-winning singer and two-time Golden Globe-winning actress, will debut not one but two residencies in 2019 at the all new Park MGM. The Park MGM is Las Vegas’ newest resort and the new theatre will host Gaga as the icing on their $550 Million development project. The must-see shows you can pick from are “Lady Gaga ENIGMA” which will focus on her classics and “Lady Gaga Jazz & Piano” (only four of these shows available)  which fill feature stripped down jazzy versions of her hits. We are trying to maintain our “Poker Face” but we are so excited for this residency.

Barbershop Cuts & Cocktails at The Cosmopolitan

You already love these guys. The incredibly innovative team at Clique Hospitality (Andy Masi, Ryan Labbe and Jason Craig) who have introduced us to so many outstanding concepts from San Diego (Oxford Social Club and The Pool House) and Las Vegas (most recently Apex Social Club and Clique Lounge at The Cosmopolitan), continue to innovate in 2019. The Barbershop Cuts & Cocktails debuts at The Cosmopolitan behind the talented scissors of Jose Sosa in spring 2019. Clique Hospitality Partner Ryan Labbe said, “The Barbershop will be a place where you can wash off the dust of a long day while sipping on a cold brew and listening to classic tunes” This barbershop will feature classic cuts, live performances, rock star karaoke and a bar from the 1800s that was featured in The Greatest Showman.

Opposites Attract

Cardi B, Billy Idol and the ‘Til Death Do Us Part at The Palms

Billy Idol was the king of ‘80s cool and if you don’t currently have Cardi B in heavy rotation on your workout playlist, you’re missing out. What could they possibly have in common? Palms Casino Resort, notoriously absent from the “where to be seen” scene over the last decade plus is making their place (again) as the curators of cool, able to mix equal parts pop culture with nostalgia, food with fashion and nightclubs with rock bands. It actually makes sense that an ‘80s rocker that makes us all repeat the refrain “mony, mony” at the top of our lungs would have a residency alongside a rapper that professes that “there is nothing in this world that [she] loves more than checks.”

Native Knowledge: Curated by Palms Casino Resort’s Creative Director Tal Cooperman, visual artists Joshua Vides’ newest installation, titled “‘Til Death Do Us Part,” is an 800 square-foot black and white wedding chapel is a recreation of Vegas’ most iconic nuptials spot, A Little White Wedding Chapel, made perfect for an Instagram-worthy wedding or vow renewal. “The Shotgun Wedding” package (valued at $500) includes an hour ceremony and time for photos in the chapel and a complimentary bottle of Moet & Chandon Ice Imperial.

Did We Just Become Best Friends?

Best Friends by Roy Choi at Park MGM

Roy Choi, the celebrity chef best known for the launch of the culinary food truck revolution in LA that trended globally for a decade, and his dedication to feeding people dishes that take their taste buds hostage is bringing his talents to entertain all those who visit new Park MGM. Best Friend (which technically opened in December) is Chef Choi’s first restaurant concept outside of Los Angeles. It’s a fusion of cultures and we know that nobody does fusion like Choi. Best Friend is one part Kogi Taco, two parts Los Angeles underground speakeasy, a dash of Chego and a pinch of Las Vegas flair. From the moment you enter through an ‘80s-vibe Korean bodega/liquor store, you succumb to gluttony and slurp down slippery shrimp or finish off your third fried bologna sandwich and you finally fill all 128 MB on your iPhone with “Instagram Stories.” Roy Choi has combined food and fun, again.
