The resort is also fostering an exciting culinary community, launching a series of monthly and quarterly chef collaborations starting in March—which are inspired by the PopUp Bagels collab they recently did featuring an ube schmear.

Nobu

An icon lands in Wailea.

It’s official—Nobu is coming to Grand Wailea. Slated to open on April 15, 2025, the globally celebrated restaurant will introduce its signature Japanese-Peruvian cuisine to the resort, offering a refined yet relaxed dining experience with panoramic ocean views. Designed by the Rockwell Group, the space will span over 13,000 square feet, seamlessly blending indoor and alfresco dining with striking murals and a dedicated sushi bar.

Diners can expect Nobu’s most iconic dishes, including Black Cod Miso, Yellowtail Jalapeño and a world-class selection of sushi, plus a handful of Grand Wailea exclusives that will set this outpost apart. “We are deeply excited to bring the Nobu signature dishes and dining experience that guests have come to cherish to Wailea Bay,” says Chef Nobu Matsuhisa.

Reservations are expected to fill up fast, so plan ahead and be among the first to experience the hottest new Maui restaurant.

 

Olivine

A taste of the Mediterranean in Maui.

There’s something about an ocean breeze that makes Italian cuisine an absolute dream. At Olivine, diners are transported to the Mediterranean coast—without ever leaving Maui. Named after a native Hawaiian mineral, this elegant-yet-approachable restaurant blends the flavors of Italy and the islands with fresh, locally sourced ingredients.

Start with a crisp glass of prosecco, pair it with some handmade pasta, and if you’re feeling bold, opt for the Smoke Over Pompei—a beautifully balanced cocktail featuring bourbon, green walnut liqueur and two types of amaro. Other menu standouts include the Crispy Squash Blossoms, Wagyu Bolognese and Kona Lobster Pizza.

Humuhumunukunukuāpuaʻa

The revitalized signature seafood and steakhouse, Humuhumunukunukuāpuaʻa, offers a Maui dining experience like no other. Set above a picturesque beachfront lagoon, this thatched-roof hideaway is an iconic Grand Wailea restaurant, complete with a circular bar featuring a glass aquarium, where you can watch tropical fish swim beneath you.

Sip on tiki-style craft cocktails as you dive into dishes like ʻAhi Tuna Ceviche served in a fresh coconut and spiny lobster coconut curry. Then, go all in with the Ibérico Pork Chop with a tamarind glaze, sweet potato purée and charred green onion. And for something extra special, book a Seaside Toast at Sunset or a private Waterfall Dining experience—because dinner with a view doesn’t get much better than this.

Local Insight: Humuhumunukunukuāpuaʻa also serves a gourmet buffet breakfast from 7-10 a.m., and it’s worth the splurge alone for the Macadamia nut bread and fresh selection of local fruits.

 

Botero Lounge (coming soon!)

Reinvented with gourmet burgers and craft cocktails.

Once this Maui resort’s beloved sushi bar, Botero Lounge is relaunching as a gourmet burger concept, and trust us—it’s going to be worth the wait. Tucked in Grand Wailea’s open-air lobby, the space is surrounded by nine larger-than-life sculptures by the late Colombian artist Fernando Botero, creating a setting that is as striking as it is inviting.

The new menu will feature elevated handhelds, including a Black Truffle Burger, Grand Wailea’s Signature Smash Burger and a Crispy Wagyu Steak Sandwich. Pair your meal with a craft cocktail from the revamped beverage program, and you’ve got the perfect spot for a relaxed yet refined evening at one of the best Maui restaurants.

 

Grand Lūʻau

A feast for the senses.

You can’t make the trek to Hawaiʻi and not experience a lūʻau. And at Grand Wailea’s Grand Lūʻau, the combination of breathtaking performances, oceanfront views and authentic Hawaiian flavors makes for an unforgettable evening.

As the sun dips below the Pacific, you’ll be treated to a live hula show and fire knife performances, all while indulging in a lavish buffet featuring traditional Hawaiian dishes like pounded taro, roasted breadfruit, mahimahi and succulent kālua pig. This evening of entertainment brings the unique culture and rich history of Maui to life. At your own private table that overlooks Wailea Beach, you’ll enjoy a family-style feast featuring traditional lūʻau cuisine. During the show, you’ll also meet Pele, the Goddess of Fire, and Kanaka, the Mermaid of Maui. Pro tip: Make sure to leave room for dessert—the Maui Gold pineapple and sweet treats inspired by local flavors are a highlight.

 

Loulu

Artisanal eats and Erewhon exclusives.

Inspired by Hawaiʻi’s native loulu palm, this laid-back café and market is the perfect place to grab a quick bite or stock up on gourmet snacks. With an emphasis on organic, sustainable ingredients, Loulu features a curated selection of local goods, handcrafted meals and Erewhon exclusives (yes, that Erewhon—the LA-based organic grocer).

For a sweet treat, try The Love & Lava Sundae, a collaboration with pro surfer and influencer Kelia Moniz Termini and Cosmic Bliss, a brand known for its grass-fed dairy and plant-based frozen treats.

Wailea Surf Haus

Wailea Surf Haus is the ultimate walk-up eatery, offering fresh salads, poke bowls and tropical cocktails just steps from the surf. These include Kālua Pork Nachos and ʻAhi Poke Nachos, served with crispy wontons, wasabi cream and spicy aioli. 

Health-conscious diners will love the Surf Haus Buddha Bowl, packed with red quinoa, roasted squash, hummus and roasted kale. But those craving something decadent can opt for the Lobster Club Sandwich, made with Maine lobster, applewood bacon and herb aioli. Pair your meal with a refreshing tropical cocktail and take in the ocean breeze. The bar stays open until 5 p.m. daily. This makes it the perfect spot to savor island flavors well into the afternoon.
