Nobu

An icon lands in Wailea.

Itā€™s officialā€”Nobu is coming to Grand Wailea. Slated to open on April 15, 2025, the globally celebrated restaurant will introduce its signature Japanese-Peruvian cuisine to the resort, offering a refined yet relaxed dining experience with panoramic ocean views. Designed by the Rockwell Group, the space will span over 13,000 square feet, seamlessly blending indoor and alfresco dining with striking murals and a dedicated sushi bar.

Diners can expect Nobuā€™s most iconic dishes, including Black Cod Miso, Yellowtail JalapeƱo and a world-class selection of sushi, plus a handful of Grand Wailea exclusives that will set this outpost apart. ā€œWe are deeply excited to bring the Nobu signature dishes and dining experience that guests have come to cherish to Wailea Bay,ā€ says Chef Nobu Matsuhisa.

Olivine

Thereā€™s something about an ocean breeze that makes Italian cuisine an absolute dream. At Olivine, diners are transported to the Mediterranean coastā€”without ever leaving Maui. Named after a native Hawaiian mineral, this elegant-yet-approachable restaurant blends the flavors of Italy and the islands with fresh, locally sourced ingredients.

Start with a crisp glass of prosecco, pair it with some handmade pasta, and if youā€™re feeling bold, opt for the Smoke Over Pompeiā€”a beautifully balanced cocktail featuring bourbon, green walnut liqueur and two types of amaro. Other menu standouts include the Crispy Squash Blossoms, Wagyu Bolognese and Kona Lobster Pizza.

Once this Maui resortā€™s beloved sushi bar, Botero Lounge is relaunching as a gourmet burger concept, and trust usā€”itā€™s going to be worth the wait. Tucked in Grand Waileaā€™s open-air lobby, the space is surrounded by nine larger-than-life sculptures by the late Colombian artist Fernando Botero, creating a setting that is as striking as it is inviting.

The new menu will feature elevated handhelds, including a Black Truffle Burger, Grand Waileaā€™s Signature Smash Burger and a Crispy Wagyu Steak Sandwich. With an emphasis on organic, sustainable ingredients, Loulu features a curated selection of local goods, handcrafted meals and Erewhon exclusives (yes, that Erewhonā€”the LA-based organic grocer).

For a sweet treat, try The Love & Lava Sundae, a collaboration with pro surfer and influencer Kelia Moniz Termini and Cosmic Bliss, a brand known for its grass-fed dairy and plant-based frozen treats.

Local Insight: The cafƩ also has a grab-and-go section, perfect for packing up a beach picnic!

 

Wailea Surf HausĀ
