Salina Rooftop Opens in Paso Robles With Fire, Flowers & Views

Charlie Palmer Brings Michelin-Starred Vision to the Central Coast

Paso Robles just got a serious upgrade. Michelin-starred Chef Charlie Palmer has officially opened Salina Rooftop at The Piccolo at Paso Robles Inn, marking the town’s first and only true rooftop dining destination. Perched above the historic downtown square with sweeping views of the Salinas River valley, this garden-to-glass concept brings live-fire cooking, botanical cocktails and a botanical design ethos to the Central Coast in a way the region hasn’t seen before.

 

A $13 Million Culinary Transformation

Salina Rooftop is the second of three Charlie Palmer Collective concepts arriving at the inn this year, part of a $13 million investment to reimagine the property’s culinary identity. Cattlemen’s Bar opened earlier in 2026 as a revitalized neighborhood watering hole celebrating the region’s ranching heritage. The Pass by Charlie Palmer follows in late 2026 with a modern tavern format and an extensive wine program. Together, the three concepts signal Chef Palmer’s full commitment to Paso Robles as a premier culinary destination on the global map.

 

The Space

Designed by award-winning hospitality studio EDG Design, whose portfolio includes Four Seasons Resort Cabo San Lucas and Mii amo Spa in Sedona, Salina Rooftop feels like an extension of the Central Coast landscape itself. Layered greenery, locally sourced vintage pots and soft mood lighting give way to fire pits after sunset. California artist Hollis Callas created a custom botanical mural anchoring the space, depicting the winding flow of the Salinas River with a soaring heron at its center. Citrus, rose pink, sage and deep fern tones echo the palette of the region’s spring wildflowers throughout.

 

The Menu

The kitchen at Salina Rooftop centers around Gozney outdoor pizza ovens, where signature pies are fired to order. The Salina comes topped with blistered tomatoes, buffalo mozzarella, fresh basil and cracked pepper. The Central Coast Shroom features local Mighty Cap Mushrooms, fontina, sage and parmesan. Shareables include Lamb Shish Kebabs seasoned with locally sourced herbs and a Grilled Shrimp Cocktail with oak-charred citrus marinade. Salads lean seasonal: the Central Coast Strawberry Salad pairs arugula with California blue cheese, pickled onion and toasted almonds, while the Watermelon Salad blends feta, chili, lime and fresh basil. The menu is built for sharing, for lingering and for the kind of golden-hour dining Paso Robles was made for.

 

The Bar Program

The cocktail program is where Salina Rooftop earns its garden-to-glass reputation. Fresh rosemary, basil and mint grow steps from the bar, and the signatures reflect it. The Peat & Pineapple blends scotch with grilled pineapple, Villon, lemon, honey and ginger beer. The Cherry Blossom Sour pairs cherry-infused rum with amaretto and lemon. A Big Fig-Ing Deal brings together Sweet Gwendoline French Gin with fig syrup, lime, honey and cranberry bitters. Zero-proof options receive equal care: Big Basil Energy mixes Lyre’s Agave Blanco with cucumber, lime and basil, while Tropic Like It’s Hot combines Lyre’s White Cane with pineapple, lime, blood orange and egg white. Local Paso Robles wines round out the list.

 

Programming & Events

Salina Rooftop is as much a nightlife destination as a dining one. Flower Hour runs Monday through Thursday from 4 to 6 p.m. with $12 signature cocktails, $10 glasses of local wine and $14 seasonal pizzas. Saturdays in Bloom brings local female DJ Darla Bea to the rooftop every Saturday from 5 to 9 p.m. for a sunset-to-dusk set.

Starting in July, the Aperitivo Glow Pairing Menu launches in collaboration with California beauty brand caliray, pairing three Salina cocktails with complimentary caliray products for the ultimate golden-hour aesthetic. The Peach Petal Spritz arrives with the Light Source Illuminator. Cafe Del Sol comes with Come Hell or High Water Mascara. Strawberry Boulevard pairs with Lipguard SPF 31 Lip Gloss. It’s the kind of collaboration that only makes sense on a rooftop in wine country at golden hour.
