If you have ever had the pleasure of passing through the tunnel that transports you from the chaos of downtown Cabo San Lucas to the tranquility of the Waldorf Astoria Los Cabos Pedregal, you might be able to share my excitement about an amazing upcoming culinary offering that the resort is hosting this year. As a foodie and frequent traveler, I have been to many culinary events and many resorts around the globe. Once you pass through the hundreds of yards of solid rock with chandeliers guiding your way, your first view is of the sea. The resort is located on 24 acres of cliff-side terrain and offers stunning views of the Pacific Ocean, which you instantly feel connected to.

In addition to its luxurious accommodations, Waldorf Astoria Los Cabos Pedregal is also known for its exceptional dining experiences. The resort features a number of on-site restaurants, including Don Manuel’s—and what might be the world’s most romantic restaurant, El Farallon. Others include The Agave Study at Peacock Alley, Neutral Coffee Lab and the debut of TRAVESƍA, a nine-course tasting menu all surrounding the beloved taco.Ā

My wife and I were fortunate enough to attend the 2022 version of the resort’s Festival of Flavors culinary weekend series featuring Pizzeria Mozza’s Nancy Silverton and Nancy Oakes of Boulevard. We were blown away by the level of talent and passion on display. From the intimate welcome cocktail reception, replete with fireworks, to the highly sought-after private chef’s table dinner, every aspect of the event was thoughtfully curated and executed to perfection.

Our favorite part of the weekend? Hands down, the tequila pairing. We sampled five tequilas paired with delicate bites from Executive Chef Pinet. I think it was our favorite part—but five shots may have blurred the memory just a bit.

Now, with the 2023 Festival of Flavors on the horizon, I’m beyond excited for what’s ahead. The lineup of renowned chefs—like Val Cantu, Carlos GaytĆ”n and Enrique Casarrubias—has my foodie heart fluttering. They each bring deep roots in Mexican cuisine and a mastery of flavor I can’t wait to taste. This year’s event promises to be nothing short of exceptional.

The festival will showcase three renowned chefs throughout the year, each with deep roots in Mexican flavors and culinary traditions. This year’s talented lineup features Chef Val Cantu, set to be honored in February. Chef Cantu draws from his Latin heritage to create bold, innovative cuisine. His restaurant, Californios, has earned Two Michelin Stars and Four Stars from the San Francisco Chronicle.

From April 13–16, 2023, Chef Carlos GaytĆ”n will showcase the bold flavors of his homeland’s heirloom recipes. He’s the first Mexican-born chef to earn a Michelin star and now helms Chicago’s renowned restaurant, Tzuco. Then, from November 9–12, 2023, Chef Enrique Casarrubias will join from his celebrated French restaurant, Oxte.
He’s the second Mexican chef to earn a Michelin star in France—blending childhood flavors with classic French technique. Each dish tells a story of travel, memory and mastery—a true taste of two worlds colliding on a plate.

The festival kicks off with a cozy welcome cocktail hour. Guests can mingle and taste signature bites from visiting chefs. Throughout the resort, chef takeovers offer a peek into their personal techniques and culinary magic. It’s the kind of access foodies dream about. The crown jewel? A private chef’s table dinner under the stars. Each course draws inspiration from Mexican tradition and is thoughtfully crafted with care. Executive Chef Gustavo Pinet brings bold flavors and elegant flair to every bite. This isn’t just dinner—it’s a flavorful journey grounded in culture and connection.
