1 | Shorebird

For an authentic taste of coastal cuisine, Shorebird puts on a sophisticated yet casual spin on international flavors. While capturing the spirit of traditional seafood and steakhouses, Shorebird will feature a wood-fired grill and rotisserie to prepare signature dishes. This includes the Duroc Heritage pork chop with Brussels sprouts and brandy-poached apples, Faroe Island’s salmon mignon with a cauliflower purée and Harris Ranch prime skirt steak that’s served with a red chimichurri sauce. For shareable options, the avocado fries with a green goddess dressing or the twice-fried chicken wings with a chipotle gastrique are delicious decisions you won’t regret.

Local Insight: Shorebird features a “raw bar,” offering a succulent selection of oysters and wild-caught, fresh seafood.

Visitors will enjoy the freshness of homemade tortillas, salsas and, of course, the signature molé sauces its existing patrons know and love. The real flavors of Mexico are present in dishes like the Carne Adovada with Santa Fe-style smoked pork shoulder, charred jalapeño and pico de gallo, or vegan enchiladas with sautéed spinach, mushrooms and mole verde. The beverage program at Molé will also provide a unique selection of wines, hand-crafted cocktails and tequilas to quench your thirst.
