Situated off coast highway in beautiful Encinitas, the Lumberyard Tavern is a long-time haven for tourists and locals. It’s been open for eight years, which says a lot, considering it’s parked on prime real estate in the middle of one of the hottest dining areas in San Diego.

This casual establishment boasts a large selection of premium whiskeys, craft beers and great food. Walking into the restaurant, raw wood paneling and an exposed ceiling gives the space an open, modern feel that’s warm and inviting. But what to order? If you ask owner Lisa Belasco, it’s the Greek-inspired Lamb Burger, which has become a crowd favorite since it landed on the menu.

The dish starts off with perfectly ground lamb cooked to a succulent medium-rare. Then, it’s layered with fresh spinach, tomatoes, pickled onions and a creamy Tzatziki sauce. Finally, to add structure, it’s all piled high on a fresh pretzel bun. The pretzel bun is found on almost all of the burgers at Lumberyard Tavern and draws in diners with its unique flavor and texture. Of course, nestled on the plate is your choice of sweet potato fries, french fries, salad or onion rings.

Q: What drink pairs best with this burger?

Lisa Belasco: We always have a rotating selection of great local beer so it’s a tough choice. But an amber ale would go perfectly with the creamy Tzatziki.

Q: Tell me what’s special about the Lamb Burger. What sets it apart?

LB: Lamb is big in many countries, but the US is still catching on. It has a bolder flavor than beef and there are not many places you can get something like it!

Q: What was the inspiration to pair these ingredients?

LB: I have a passion for Greek food and we knew these classic flavors would go perfectly together.
