Six Restaurants, Sleek Architecture and Wellness Offerings Make This Mexico Resort a Dream Destination
Situated in San Jose del Cabo—the quieter, less rowdy area of Mexico’s Baja California peninsula—sits Viceroy Los Cabos. Loved by celebrities (it’s true–Justin and Hailey Bieber have stayed here) and Californians alike, this Cabo resort offers it all without having to step foot off the property. Although, San Jose del Cabo is a vibrant, charming town if you do choose to explore the surrounding area. With six on-site restaurants featuring different cuisines, multiple pools (we nearly lost count), glistening ocean-view rooms and some of the kindest staff we’ve had the pleasure of encountering, there’s no hiding that we absolutely adored our stay at the Viceroy Los Cabos.
An Architectural Masterpiece
Viceroy Los Cabos opened its doors in 2018 and has brought the wow factor to San José del Cabo ever since. The impressive structure itself made its debut in 2016, featuring an ambitious design that harmoniously blends sweeping soft curves with sharp geometric lines–all in pristine white. Nestled against a rugged desert backdrop and the blue waters of the Sea of Cortez, the architecture alone is a jaw-dropper. Seven staggered buildings create a U-shape around the resort’s series of shallow pools, which offset the sleek white architecture. The esteemed Mexican architect behind the design, Miguel Angel Aragonés, skillfully incorporated elements of light and water, creating a seamless connection between the sea and the resort. Beginning with the lobby, which was designed by Al Arquitectura de Interiores, everything leads down to the sand via “water walkways.” Bring your camera—you’ll want to capture every tiny detail.
Bring on the Blue Hues
One of the main reasons Mexico’s Baja California peninsula is such a sought-after destination is due to its warm weather, beachside paradise and endless margaritas. Did we mention it’s a two-hour flight from Southern California? You can get here faster than you can get across the 405 on a Friday night. Kissed by the sun practically year-round, relaxation is the name of the game at a place like the Viceroy Los Cabos. Choose to cool off in the infinity-edge beachfront pool with a cerveza in hand or sunbathe at the adults-only rooftop escape pool—we counted, and there are five different pools to lounge the days away. The sun, the sand and the sea become the backdrop to your ultimate escape as you catch those much-needed rays.

Come Home a New You
From cold plunges and massages to private meditation sessions and sound healing, it would be a sin to not experience the wellness offerings this luxurious resort has to offer. With their new Strength of Mind package, guests are able to enjoy guided experiences and new holistic treatments with the goal of encouraging mindfulness and deep relaxation. The SPA is a dimly lit, 11,000-square-foot sanctuary that instantly calms both the mind and body.
Local Insight: The Harmonyum Healing technique is now offered at The SPA, which makes the Viceroy Los Cabos the only hotel spa in the world to offer it. Harmonyum works harmoniously to bring the mind and body into a state of equilibrium, which is known as the “zero point.” In this transformative state, health is replenished and yields benefits like restful sleep, enhanced digestion, improved heart function and a revitalized sense of youthfulness and vitality.
Culinary Showstoppers
It turns out, Cabo isn’t all tacos and tequila. Sure, you can get your street-food fix with a quick trip into town, but Viceroy Los Cabos elevates Mexico’s culinary scene to new heights, beckoning discerning travelers with its swoon-worthy selection of on-site dining options. Six tantalizing restaurants dot the property, ranging from an enchanting rooftop restaurant to a tableside Japanese grill.
Guests can find solace at Cielomar, which is a seafood-centric haven perched high above the sea that features live music every Wednesday, Thursday and Saturday. At Casero, the resort’s main restaurant, traditional Mexican cuisine takes center stage with vibrant dishes and ingredients sourced from nearby farms and markets. The options continue to entice with Nido, which means “nest.” This Japanese-inspired restaurant sits under a stunning nest-like structure at the center of the property and is surrounded by “espejos de agua,” or water mirrors. Diners can expect robatayaki-style cuisine with sea-to-table selections like oysters, nigiri, lomo saltado and pressed pork-skin dumplings.
Just last year, the resort also added a new culinary destination to its already impressive collection. Dalia offers an open-air garden dining experience where fresh Mediterranean flavors receive a creative Los Cabos twist. Native plants, citrus trees and wood accents make this restaurant warm in terms of ambiance and is all-around easy on the eyes. Indulge in handmade pasta, wood-fired meats and fresh seafood from the talented Head Chef Bernard Prim under the stars.
Local Insight: Just in time for summer, Viceroy Los Cabos launched its newest family-friendly program, “Little Chef-iche.” Held at Dalia, this hands-on culinary experience allows parents and kids to connect through a guided cooking class, where they’ll learn how to make ceviche (adults using fresh fish and the younger ones using fresh fruit)!

Barefoot-Luxury Living Quarters
Minimal, sleek and sunlit, the rooms at Viceroy Los Cabos are nothing short of magnificent with no degree of luxury spared. Design accents and furnishings coordinate with the architectural simplicity of the resort—think pure white interiors, warm wood accents and stone beige flooring. Categories range from partial ocean-view guest rooms with rain showers, furnished balconies and floor-to-ceiling windows (some even have soaking tubs) to ultra-luxe suites, casitas and villas with ample (and we mean ample) living space—perfect for larger groups. Possibly one of the best aspects of each room, be it a junior suite or a five-bedroom oceanfront villa, is the way the natural landscape makes its way in. The expansive windows frame the Sea of Cortez, bringing the beauty of Los Cabos into your home away from home.
