Don’t Sweat the Details: Colette’s Catering Will Sort Everything Out For Your Holiday Party

Fall is one of the most beloved seasons of the year and it’s no wonder why. It’s not only the debut of the famed pumpkin spiced lattes people go berserk over. Cooler weather blows in, pumpkins appear as quickly as Cinderella’s did after midnight, and most importantly, the autumn-inspired eats are enough to charm the overalls off a scarecrow. One talented catering company perfectly nailed a fall palate at their latest Pop Up Chef Dinner. We were pleased to attend and eat more food than what is advised by any health professional.

Colette’s Catering & Events began and operated single-handedly by one woman, Colette Coffman, in 1992. Today, they are one of Southern California’s most prolific catering services who specialize in delicately crafted and locally sourced dining. “Being a catering company, this event is a different way to connect with people. It is unlike the type of events we do for all our clients because we are able to allow the food to shine,” Colette’s Creative Director, Sarah Kuhlberg said. This was unequivocally proven at the event, showcased inside Anaheim Packing District’s very own Cooks Chapel. Decorated with gorgeous floral arrangements, it was the perfect atmosphere for Executive Chef Colleen and her team to demonstrate creative talent.

As guests filled in, an assortment of hors-d’oeuvres paired with specialty sips were offered including a vanilla pear vodka cocktail and a maple whiskey rendition of the timeless old-fashioned. Not mentioned on the menu was a squash tortellini pasta to start. What wasn’t surprising was how it left us wanting more. Next, a frisée fig salad with a burrata cheese that is impossible to forget. Guests’ glasses never fell short and the second course followed in symphonic sequence.

Three remarkable plates were served one right after the other, each with notable qualities. This course kicked off with a pan roasted petite tender that was surrounded by spiced sweet potato puree and shaved Brussels sprouts. The puree was a perfect contender to traditional mashed potatoes, but without the sin. Grilled pork tomahawk made an entrance shortly after in all its grandiose. Last, an item to wrap up the second course was a cauliflower with Marcona almonds, petite herb salad, anchovy crumb and embellished with flowers.

The grand finale that brought the enchanting evening to a close (and to our knees) was an elegant take on a classic comfort treat—a pumpkin whoopie pie with dark chocolate ganache and figs. The saying is true; they really do save the best for last. Guiltless comfort food is an impressive achievement, and they rocked our vote with a whimsical fall menu.
